A make-ahead fish dinner worth planning for

Give the marinade time, then finish the fish over high heat

Miso marinated black cod begins two to three days before it reaches the dinner table. Four eight-ounce fillets spend that time coated in a cooked miso mixture, giving you a meal that can be prepared in stages rather than crowded into one evening.

Once the marinating time is complete, the fish moves from high heat into its 400°F finish in the same ovenproof skillet. Wipe away the excess coating, brown each side, and finish just until the flesh is opaque and flakes easily. With the advance work already done, you can focus on the hot pan and bring all four portions to family or friends together.

Cook and cool the marinade

Use a kitchen scale to check the fish portions and measuring cups and spoons for the marinade. Add one-quarter cup each of sake and mirin to a saucepan on the stovetop. Bring both liquids to a boil, then lower the heat before the next addition.

Add the white miso paste and stir with a whisk until it dissolves. Raise the heat, pour in the sugar, and keep whisking. As soon as the sugar has dissolved, remove the pan from the heat. Let the mixture cool to room temperature before it touches the fish; this is a good point to clear a level space in the refrigerator and mark the cooking day on your calendar.

Dry, coat, and refrigerate the fillets

Pat every portion dry with paper towels. Use a pastry brush to spread the cooled marinade over the top, bottom, and sides, then arrange the pieces in an airtight nonreactive container. Cover it and place it in the refrigerator for two to three days. Close the container securely, keep it cold, and let the long rest do its work before cooking day.

Before heating the pan, lightly wipe the excess marinade from each piece without rinsing it away. Work gently so the portions stay intact, and set them near the stove only when the pan and oven are nearly ready. The remaining cooking steps are brief and hot, so arrange everything you will need before you begin.

Brown both sides and finish in the oven

Heat the oven to 400°F, then heat the pan over high heat. Film the cooking surface with one tablespoon of neutral high-heat vegetable oil. Lay in the portions skin-side up and cook for about three minutes, until the bottoms are browned and blackened in spots. Stay close to the pan so you can watch that visual change.

Turn each piece with a fish spatula and brown the second side for two to three minutes. Put on oven mitts before moving the hot pan into the oven. Bake for five to ten minutes, allowing for the thickness of each portion. Check the flesh at the shorter end of the range and stop when it is opaque and flakes easily.

Let the make-ahead rhythm work for your table

A dinner with family or friends often feels easier when one important task is already waiting in the refrigerator. Make the marinade together a few days ahead, or take turns measuring and whisking while someone clears space for the covered container. On cooking night, one person can set the table while the cook gives full attention to the skillet and oven transfer. The four fillets can then be brought to the table at the same time, hot from their final bake. Serve them as soon as they reach the opaque, flaky stage, and enjoy the unhurried part of the meal knowing the careful work was spread across several days instead of saved for the last minute.

Share how you planned the two-to-three-day marinating window, or ask a question about moving the fish from the skillet to the oven. Leave a comment.

Instructions

Prepare the Marinade and Marinate

  • Two to three days before cooking, make the miso marinade.
  • Bring the sake and mirin to a boil in a saucepan, then turn the heat down to low.
1/4 cup sake, 1/4 cup mirin
  • Add the white miso paste and whisk until it dissolves.
  • Turn the heat up to high. Add the sugar while whisking constantly.
  • Remove the marinade from the heat once the sugar has dissolved, then cool it to room temperature.
  • Pat the black cod fillets dry with paper towels.
  • Coat the fillets with the cooled marinade and place them in a nonreactive container. Cover and refrigerate for 2 to 3 days.

Cook the Black Cod

  • Heat the oven to 400°F. Heat an ovenproof skillet over high heat on the stovetop.
  • Lightly wipe the marinade from the fillets, but do not rinse them.
  • Film the skillet with the neutral high-heat oil. Place the fillets skin-side up and cook until the bottom browns and blackens in spots, about 3 minutes.
  • Flip the fillets and cook the other side until browned, 2 to 3 minutes.
  • Transfer the skillet to the oven and bake for 5 to 10 minutes, depending on thickness, until the fish is opaque and flakes easily.

Notes

Allow 2 to 3 days for marinating.
