A gradual broth method with a savory seafood finish

Keep the stock hot, stir patiently, and add the prawns at the very end

Italian sausage and prawn risotto starts with mild Italian pork sausage, a finely chopped onion, and minced fresh garlic. Olive oil carries those savory flavors into the rice, with a second portion reserved for the seafood and mushrooms.

Arborio rice slowly absorbs hot low-sodium chicken broth and dry white wine. Butter and finely grated Parmesan finish the creamy base before prawns, sliced white mushrooms, and fresh basil bring texture, color, and a fresh final note.

Prepare every component before the rice begins

Use measuring cups and spoons to portion the rice, broth, wine, oil, butter, cheese, and basil. Work with a chef’s knife on a cutting board to make the onion and garlic small enough to melt into the base and to slice the mushrooms evenly.

Warm the broth in a medium saucepan and keep it below a boil. A ladle lets you add a similar amount each time, which makes the rice easier to judge. Cold broth would interrupt the simmer and lengthen every absorption cycle.

Brown the sausage, then build the rice in the same pan

Use a large sauté pan so the grains can spread in a shallow layer. Brown the sausage thoroughly, breaking it into pieces that will fit easily on a spoon, then move it to a large plate. Leaving its savory browned traces in the pan gives the onion and rice a flavorful starting point.

Stir with a wooden spoon after the aromatics soften. Toast the rice until the outer edges look slightly translucent, add the wine, and let most of it evaporate. From there, add broth gradually and stir regularly rather than pouring in the full quantity at once.

Finish the creamy base off direct heat

Taste a grain after the later broth additions. It should be tender and creamy at the surface while retaining a gentle firmness at the center. Remove the pan from direct heat before stirring in the butter and most of the cheese, which helps the finished risotto stay glossy instead of becoming greasy.

Use a fine grater for the Parmesan so it melts quickly and evenly. Let the pan stand for five minutes, but keep the remaining components moving; risotto thickens as it waits, and it is best served while it can still settle softly in the bowl rather than hold a rigid mound.

Cook the prawns and mushrooms just before serving

Heat the remaining oil in the second large sauté pan and give the mushrooms enough room to brown. Add the prawns only after their moisture has cooked away. Use an instant-read thermometer to confirm the sausage reached 160°F and the prawns reach 145°F without staying on the heat until rubbery.

Fold everything together with a silicone spatula, using broad turns that protect both the rice and seafood. Move the risotto to a large serving bowl and finish with the reserved cheese and basil. All three pans rely on the stovetop, so clear a safe landing place before the final assembly begins.

Bring the risotto out while it is loose and warm

Four bowls make this risotto especially comfortable for a family supper or a small table of friends. Set the serving bowl down as soon as the prawns and mushrooms are folded in, pass warm shallow bowls, and let everyone spoon a portion before the rice tightens. A crisp salad or simply cooked green vegetable gives the meal contrast without competing with the sausage, seafood, and Parmesan. Some diners may want extra cheese, while others will prefer more black pepper at the table, so offer those separately rather than changing the full bowl. Make space for conversation before seconds, but do not wait too long to return to the risotto; its best texture is a soft, creamy wave around the spoon. The mix of browned sausage, tender prawns, and mushrooms gives each serving plenty to discover without needing another main dish.

  • 4 ounces mild Italian pork sausage casing removed
  • 1 small onion finely chopped
  • 2 cloves fresh garlic cloves minced
  • 2 tablespoons olive oil divided equally
  • 1 cup Arborio rice
  • 2 â…” cups low-sodium chicken broth
  • ½ cup dry white wine
  • 2 tablespoons butter
  • ½ cup Parmesan cheese finely grated; some reserved for serving
  • 8 ounces raw prawns peeled and deveined
  • 4 ounces white mushrooms sliced
  • ÂĽ cup fresh basil chopped; a few leaves may be reserved for serving

Instructions

Prepare the Components

Cook the Risotto

  • Stir in the Arborio rice and cook until the grains are lightly toasted at the edges. Add the dry white wine and stir until it is almost fully absorbed.
1 cup Arborio rice, 1/2 cup dry white wine
  • Add one ladle of hot broth, stir, and simmer until it is nearly absorbed. Continue adding broth one ladle at a time, stirring regularly and waiting between additions, until the rice is creamy and al dente.
  • Remove the pan from direct heat. Stir in the butter and most of the finely grated Parmesan, then let the risotto stand for 5 minutes while the prawns and mushrooms cook.
2 tablespoons butter, 1/2 cup Parmesan cheese

Cook the Prawns and Serve

  • Heat the remaining olive oil in the second large sautĂ© pan over medium-high heat. SautĂ© the mushrooms until browned, add the raw prawns, and cook until they are opaque and reach 145°F.
  • Fold the cooked sausage, mushrooms, prawns, and chopped basil through the risotto. Transfer to a warm serving bowl and finish with the reserved Parmesan and basil, if using.
    1/4 cup fresh basil

Notes

Keep the broth hot, wait until each ladle is nearly absorbed before adding the next, and stop when the grains are creamy outside but still gently firm at the center. Serve risotto promptly.
