This beer brittle recipe combines beer, pretzels, and roasted nuts in a crisp homemade candy cooked to 305°F, then cooled and broken into pieces.

  • 1 Mixing Bowl
  • 1 Wooden Spoon
  • 1 Silicone Mat
  • 1 Parchment Paper optional alternative to the silicone mat
  • 1 Measuring Cups and Spoons for measuring the candy ingredients
  • 1 Large Heavy-Bottomed Pot an 8-quart pot gives the bubbling syrup room
  • 1 Candy Thermometer

Ingredients

  • 3 cups Granulated Sugar
  • 12 floz Beer
  • 3 Tbps Light Corn Syrup
  • 2 tsp Vanilla Extract
  • 3 cups Lighty Roasted Nuts
  • 1.5 cups Lighty Crushed Pretzels
  • Cooking Spray

Instructions

  • Prepare a baking sheet lined with parchment paper or a silicone mat sprayed with cooking spray.

  • Set a large, heavy pot over high heat
  • Add the sugar, beer, corn syrup, and vanilla and mix together. Bring to a boil.
    3 cups Granulated Sugar, 12 floz Beer, 3 Tbps Light Corn Syrup, 2 tsp Vanilla Extract
  • Reduce the heat to a simmer and cook until the sugar is dissolved completely and the liquid reaches a temperature of 305 F
  • Remove from heat and mix in the nuts and pretzels.
    3 cups Lighty Roasted Nuts, 1.5 cups Lighty Crushed Pretzels
  • Pour onto the baking sheet
  • Allow to cool and break into pieces

Notes

Use a cashew nut mix for the roasted nuts.
