Chicken and Gnocchi Bake with Broccolini

This chicken and gnocchi bake combines broccolini, cooked chicken, Gruyère, and Parmigiano-Reggiano, then bakes until bubbly and golden.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon garlic minced (from 3 cloves)
  • 3 tablespoons unbleached all-purpose flour
  • 2 ¼ cups low-sodium chicken broth
  • 2 heads broccolini about 9 ounces total, cut into 2-inch pieces (4 cups)
  • 14 ounces gnocchi fresh or frozen
  • 1 ½ cups cooked chicken torn; preferably dark meat
  • 3 ounces Gruyère cheese grated (1 cup)
  • 2 ounces Parmigiano-Reggiano grated (1/2 cup), divided
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions

Cook the Gnocchi Mixture

  • Preheat the oven to 450°F.
  • Melt the butter in a medium saucepan over medium-high heat. Add the garlic and cook until fragrant, 30 seconds.

  • Add the flour and cook for 30 seconds, then whisk in the chicken broth. Bring to a boil and cook for 1 minute.

  • Add the broccolini, cover, and cook for 2 minutes. Uncover, add the gnocchi, and cook for 2 minutes.

  • Remove from the heat. Stir in the cooked chicken, Gruyère, and 1/4 cup of the Parmigiano-Reggiano. Season with kosher salt and freshly ground black pepper.

Bake and Rest

  • Divide the mixture among four 12-ounce baking dishes, or transfer it to one large baking dish or an ovenproof skillet. Sprinkle with the remaining 1/4 cup Parmigiano-Reggiano.

  • Bake until bubbly in the center and golden brown on top, about 15 minutes, or about 20 minutes if using one large dish. Let stand for at least 15 minutes before serving.

Notes

Fresh or frozen gnocchi may be used. Dark-meat chicken is preferred. Four 12-ounce baking dishes take about 15 minutes; one large baking dish or an ovenproof skillet takes about 20 minutes. Let stand for at least 15 minutes before serving.
